For photographs headed to a web page, 75 to 85 holds up: WebP at 80 tends to look like a JPEG at 90 while weighing about a third less. Push past 90 for screenshots or anything with fine text in it. Below 60 the smearing shows first in gradients, skies and studio backdrops. The panel re-encodes at whatever the slider says, so read the number there rather than guessing.
